No-bake Pumpkin Pie

I don't know how I found this recipe but it look interesting so I thought I'd try it. I didn't use sugar-free pudding but I did everything else the same. I have only tried the filling when I licked the spatula (yes, I lick spatulas) but I liked it. I think I might try vanilla flavored greek yogurt next time just to give it a little more sweetness. It's definitely not as good as pumpkin chocolate chip bread but as far as pumpkin pie goes, this one is okay.


  • Pie crust (I just used a graham cracker one like the original recipe had)
  • 1 cup pumpkin
  • 1 cup greek yogurt
  • 1 package s/f butterscotch pudding mix (I used normal butterscotch pudding)
  • 1 tsp. pumpkin pie spice (or...1/2 tsp. cinnamon, 1/4 tsp. ginger, 1/8 tsp. ground cloves, 1/8 tsp. nutmeg)
Mix pumpkin, yogurt, pudding mix and pie spice. Carefully spread into the pie shell. Refrigerate for 1 hour.

I would suggest topping it with whipped cream because that makes everything better (except maybe vegetables).
