- Pie crust (I just used a graham cracker one like the original recipe had)
- 1 cup pumpkin
- 1 cup greek yogurt
- 1 package s/f butterscotch pudding mix (I used normal butterscotch pudding)
- 1 tsp. pumpkin pie spice (or...1/2 tsp. cinnamon, 1/4 tsp. ginger, 1/8 tsp. ground cloves, 1/8 tsp. nutmeg)
Mix pumpkin, yogurt, pudding mix and pie spice. Carefully spread into the pie shell. Refrigerate for 1 hour.
I would suggest topping it with whipped cream because that makes everything better (except maybe vegetables).
